Serves 2

2 tbsp olive oil

300g mixed mushrooms

2 tbsp butter

2 sprigs thyme

1 garlic clove grated

300g Tofu cut into cubes

Heat your oil in a frying pan on medium/high. Arrange mushrooms & tofu in a single layer and cook until the mushrooms start to go golden brown. Season, tossing often until golden brown all over. Reduce heat if they start to darken too much.

Reduce heat to medium and add butter, thyme sprigs, and garlic. Cook until the butter foams and they are all nicely cooked.

Divide between 2 plates and enjoy
