Makes 12

2 tbsp chia seeds

90g of oats blitzed until it’s flour

90g oats

1/2 cup almonds blitzed until it flour

1 lemon zested

1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

100g peanut butter

25 g coconut oil melted

60 g honey

30g walnuts roughly chopped

100g dried cherries

Preheat oven to 180 degrees

In a small bowl pop your chia seeds with 5 tbsps of warm water and leave to thicken

In a large bowl mix your oat flour, oats, almond flour, lemon zest, baking powder, soda and cinnamon.

In another bowl mix the peanut butter, coconut oil, honey and chia seed mixture. Add into the bowl with your flour mixture and mix until well combined.

Fold in your cherries and walnuts.

Scoop 1/4 cup full of batter circles onto a baking tray and bake for 20 minutes until golden brown.

Leave to cool and pop into an airtight container.
