Serves 2

4 large eggs
60ml of skimmed milk
1/4 tsp salt
1 garlic clove grated
1 shallot diced
1 handful of baby spinach roughly torn
1 roasted pepper roughly chopped
50g of feta crumbled

Pop your grill on.
In a bowl mix together the eggs, milk, salt and a grind of pepper.
In a small/medium ovenproof frying pan heat a splash of olive oil and cook the shallot until softened, add the garlic and cook for 1 minute.
Add the pepper and spinach and keep moving it so it wilts down.
Once wilted pour your milk mixture into the pan and move around with a spoon or spatula to make sure it’s evenly distributed and the eggs have got to the bottom.
Sprinkle over your feta.
Cover in foil and turn the heat to low, gently cook for 10 minutes.
Remove foil and pop under the grill for 3-4 minutes to brown the top.
Slice and enjoy !
