Serves 2
1 garlic Clove grated
1 red onion sliced
1/2 tsp smoked paprika
400g tin of chopped tomatoes
400g tin of butter beans rinsed
Big handful of spinach roughly chopped
150g fresh prawns
Heat a drizzle if oil in a frying pan and fry the onion until soft, add your garlic & paprika and cook for a further minute.
Pop in your tomatoes & butter beans and bring to a low simmer for 8 minutes or so.
Add your prawns and spinach, cook for 3 minutes or until your prawns are all pink.
Divide into 2 bowls and enjoy
