Serves 2

1/2 red pepper diced

1/2 green pepper diced

1/2 red onion diced

1/2 can of tuna in spring water drained

125g grated cheese of your choice (I use reduced fat cheddar)

6 eggs

Handful of Salad leaves

Heat a little olive oil in a frying pan and cook your onion and peppers until softened.

Whisk your eggs with a generous grind of black pepper and a pinch of salt

Pour your eggs over your pepper mixture and cook over a medium heat until the eggs are set.

Sprinkle over your tuna and cheese and pop under the grill under the cheese has melted. Fold over.

Portion in 2 and serve with some salad leaves.
