olive oil
1 white onion diced
2 garlic cloves grated
1 red pepper diced
500g lean turkey mince
1/2 tbsp of chilli powder (as hot as you prefer)
2 tsp ground cumin
1 tsp dried oregano
1 tsp cayenne pepper
1 can of chopped tomatoes
200ml chicken stock
1 can red kidney beans, rinsed and drained
2 handfuls of mixed salad leaves tossed in olive oil to serve with.
Heat a large pan with a drizzle of olive oil, cook your onion, garlic and pepper for 5 mins or so until soft.
Add the mince and cook until no pink meat is left.
Add your chilli, cumin, oregano, cayenne and season.
Stir thoroughly and then add tomatoes, stock and kidney beans.
Bring to a boil and then reduce to a simmer for 45 mins or so until nicely thickened.
Portion into 2 bowls and enjoy with a nice s
