Makes 12
1 large cauliflower
100g diced ham
70g baby spinach roughly torn
70g finely chopped shallot
4 Eggs, beaten
1 garlic clove finely grated or chopped
100g grated lower fat Cheddar or cheese of your choice
Cayenne pepper for dusting.
Preheat your oven to 180
Roughly cut up your cauliflower and place into a food processor to blitz down, alternatively you can use a grater.
Place into a large bowl and add eggs, grated cheese, ham, spinach, onion and garlic and stir until fully combined. Season with salt & freshly ground pepper.
Grease a muffin tin with cooking spray and fill each one two thirds full.
Bake for 20-25 minutes until light golden brown.
Lightly dust with cayenne.
Turn out of the tray and enjoy.
Can be eaten warm or cold once stored in the fridge.

(If you find cauliflower it a bit wet, scrunch in a clean tea towel to get the excess water out)
