Serves 2

2 Handfuls of chopped iceberg lettuce

1 whole cucumber roughly chopped

1 red onion roughly chopped

3 large tomatoes roughly chopped

4 slices of Gouda cheese cut into strips

4 slices of thick cut ham cut into strips

2 hard boiled eggs

Ranch Dressing

160g reduced far creme fraiche

50g low fat mayonnaise

2 cloves of garlic grated

1/4 tsp dried dill

1/4 tsp fresh chopped parsley

1/2 tsp fresh chopped chives

1/4 tsp onion powder

1/4 tsp salt

1/4 tsp fresh ground pepper

Mix together all your dressing ingredients, I put mine in a blender but you can just whisk it by hand if your parsley & chives are cut very fine.

Toss together the lettuce,cucumber, onion, tomatoes, cheese & ham.

Cut the eggs into quarters and pop on top

Spoon a generous amount of sauce over your salad and tuck in.
