Massaman Curry
Serves 2
400g diced beef
40g unsalted peanuts
200ml reduced fat coconut milk
2 tbsp massaman curry paste
2 potatoes cut into small cubes
1 onion thinly sliced
1 star anise
1 tbsp tamarind pasts
1 tbsp fish sauce
1 red chilli diced
Heat a drizzle of oil in a large pan and seal off your beef. Add your onions and cook until soft.
Pop in your curry paste and cook for a minute.
Add your coconut milk, potatoes, star anise, tamarind, fish sauce, chilli and 100ml water.
Cover and slowly simmer for 30 minutes (check it to make sure it doesn’t dry out. Add some water or coconut if it looks too dry) or so until your potatoes are cooked through and you have a nice thick curry. (if it’s too wet, reduce with the lid off)
Serve with jasmine rice.
