lunch stuffed avocados
Serves 2
1 pack of taco seasoning
2 ripe avocados
Juice of 1 lime
1 medium onion, chopped
250g low fat minced beef
Handful of grated reduced fat cheddar
Handful of shredded lettuce
Sour cream, for topping
Halve and stone your avocados. Using a spoon, scoop out a bit of avocado, creating a large well. Dice the removed avocado and set aside to use later. Squeeze lime juice over all avocados (this will help to stop them going brown)
Pop a frying pan over medium heat and put a drizzle of oil in, Add onion and cook until soft. Add your mince and taco seasoning, breaking up the meat with a wooden spoon. Season and cook until the beef is no longer pink, about 6 minutes. Remove from heat.
Fill each avocado half with beef, then top with cheese, the reserved avocado, lettuce, and a dollop of sour cream
