Sweet Treat Mince Pies

Cinnamon pastry

125g of butter cubed

250g of flour

1 tsp salt

1 tbsp of water

1 tsp cinnamon

Jar of mincemeat or if you would like my recipe,

1/2 tsp Allspice

1/2 tsp Nutmeg

1/2 tsp Cinnamon

Zest of an orange

Zest of a lemon

200g cooking apples cored and cut into a fine dice

65g mixed peel

250g raisins

100g dried dates chopped

150g dried cranberries

150g currants

100g soft brown sugar

150ml fresh 100% orange juice

150ml fresh 100% apple juice.

Mix everything together in a bowl, leave for 5 days, stirring daily and then pop in sterilised jars.

Pack of ready made marzipan rolled thinly.

1 egg whisked.

Pop the flour, cinnamon and salt into a bowl, add the butter. use your fingertips to rub in the butter until it looks like small breadcrumbs.

Add a tablespoon of cold water and slowly bring the dough together with your fingers. Once the dough has just started to form a ball, pop out onto a work surface and knead lightly to form a nice smooth ball of dough.

Wrap in cling film and pop in the fridge for at least 30 minutes before using to allow the pastry to rest.

Preheat your oven to 180 degrees.

Remove from the fridge, lightly flour your work surface,  Roll out to a few mm thick, line your pie tin or individual pie moulds.

Fill with mincemeat, top with some marzipan (i cut into stars), top with pastry (again I cut into stars), brush over with beaten egg and cook for 20 minutes for small individual ones and 30-35 minutes for a large one. Check the pastry is lovely and golden.
