breakfast-one pan bake
Serves 4
400g cauliflower and brocolli
8 slices bacon, chopped
Handful of sliced button mushrooms.
8 medium eggs
200ml kimmed milk
2 garlic cloves grated
2 tsp. paprika
80g Reduced fat cheddar
2 spring onions, thinly sliced, plus more for garnish
Preheat oven to 180 degrees.
Pop your cauliflower and brocolli into a blender and blitz, then pop into an ovenproof dish.
Fry your bacon until it’s done to your liking. Wipe your frying pan with kitchen towel and cook your mushrooms.
In a large bowl, whisk together your eggs, milk, garlic, paprika and season.
Sprinkle your cooked bacon, mushrooms and spring onions over your cauliflower, pour over egg mixture and top with your cheese.
Bake until eggs are set and top is golden, 30-35 minutes.
Garnish with a sprinkling of spring onions.
