1 left over chicken carcass with some meat attached but all skin removed .
Handful of lentils
4 carrots diced
1 onion diced
2 celery sticks diced
1 tin of chopped tomatoes
1 tbsp Worcester sauce
1 bay leaf
1 tsp dried basil
1 tsp dried oregano
1 tsp paprika
Good grind of black pepper
Pop the carcass into a large saucepan and cover in water, bring to a boil, reduce to a simmer, and cook for about 45 minutes. Remove the carcass but keep all the meat and chop it up.
Strain through a fine sieve into a clean saucepan. Add the chopped chicken and all other ingredients.
Simmer until the vegetables are tender, about 25-30 minutes.
Remove bay leaf and enjoy
