Peach & ginger topping
2 peaches cut into small dice
2 tablespoons of natural honey
1/2 tsp ground cinnamon
Grating of nutmeg
1/2 tsp ground ginger
1 tbsp unsalted butter
Heat the butter over a medium heat. Add the diced peach & ginger and cook for 3 minutes or so until the peach is softened but not mushy
Stir in the honey, cinnamon, ginger & nutmeg and cook for a minute.
Pancakes
Makes roughly 6
120g plain flour
1 tsp bicarbonate of soda
2medium eggs
100g half fat crème fraiche
100ml of skimmed milk
1 tsp vanilla extract
In a bowl mix the flour & bicarb soda together.
In another bowl mix together the crème fraiche, vanilla, milk & eggs then add to the flour mix and beat to thoroughly combine
Heat a non stick frying pan on medium heat and spray with your choice of cooking oil spray.
Pour roughly 3 tbsps. of batter at a time into the pan and cook for roughly 3 minutes, flip and cook for a minute. After cooking a couple you may need another spray of oil.
Top the pancakes with your peach mix and enjoy
