lunch cauli & brocolli soup
Serves 2
1 onion roughly chopped
1 large broccoli head roughly chopped
1/2 cauliflower chopped
1 litre of vegetable stock
1 clove of garlic
1 tbsp Dijon mustard
1 tsp thyme
Pop your onions and garlic in a large saucepan with a drizzle of olive oil and cook until soft.
Put in your broccoli, cauliflower and stock. Bring to a simmer for 20 minutes.
Add your thyme and mustard and let it stand for 5 minutes.
Blitz with a hand blender or in a liquidiser, portion and enjoy.
