Serves 4

1 large onion diced

1 red pepper diced

2 cloves of garlic grated

1 tsp chilli powder (strength of your choice)

1 tsp smoked paprika

1 tsp cumin powder

1 tsp dried marjoram

1 Oxo cube

4 squares of dark chocolate

1 can of kidney beans

1 can of chopped tomatoes

2 tbsp tomato purée

500g extra lean beef mince

Pop a large frying pan  on medium heat, add your onions and cook for 2 minutes or so until soft.

Pop in your pepper, garlic, chilli powder, paprika, cumin & marjoram, cook for a couple of minutes stirring it all together.

Turn the heat and add your mince, breaking it up as it browns. Cook until it’s no longer pink.

Crumble your oxo cube with 300ml of boiling water and stir into your beef mixture.

Add tomatoes, kidney beans, purée and season.

Bring to a gentle simmer for 30 minutes, stirring occasionally.

It should be nice and rich by now, keep simmering if not.

Turn off the heat, Pop in your chocolate and put a lid on for a couple of minutes. Give it a good stir and serve
