Serves 2
2 large potatoes cubed roughly 3cm
Pinch of paprika
Small bunch of parsley chopped
1/2 lemon
Handful of panko breadcrumbs
1 garlic clove
1 cooking chorizo sausage blitzed
2 small pieces of cod
Bunch of asparagus to serve.
Parmesan optional
Preheat your oven to 180 degrees. Drizzle a little olive oil over your potatoes, toss with paprika and pop them in a baking tray, cook for 35 minutes.
In a bowl, pop in your parsley, chorizo, breadcrumbs,Parmesan if using, 1tbsp of olive oil, zest of your lemon and seasoning.
Divide your crumb mix between your 2 pieces of cod and push it over the top of each piece. Pop in the oven for 15 minutes.
Toss your asparagus in a tiny bit of oil and griddle on high for roughly 5 minutes until they still have a bit of bite to them.
Pop your cod, asparagus and potatoes on 2 plates and if you have any cod topping that fell off, just sprinkle it over your plates.
