Serves 2
Ingredients:
4 free range medium eggs
8 cherry tomatoes, halved
A handful of spinach roughly chopped
1 small red chilli diced
2 tsp garam masala
1 tsp turmeric
1 tsp cumin
1 onion, thinly sliced
2 tbsp of coriander, chopped
Method:
Whisk the eggs and season with salt and fresh pepper. Add your tomatoes, spices & spinach and stir well to combine. Heat a drizzle of oil in a non stick frying pan over a medium heat and fry the onion for a few mins until softened. Pour in your egg mixture and give it a stir around, cook until it’s nicely set. Scatter with your fresh coriander and a little extra chilli.
